The cultivars – very high Coratina content
The cultivars grown are: Leccino 35%, Frantoio 35%, Coratina 20%, Pendolino 10%, and other minor varieties.
The very high percentage of Coratina, an olive variety that is rare in the Veneto Region, with its characteristic wine-red colouring due to its high content of polyphenols and its bitter taste, provides Salcedo EVO with a special slightly bitter aftertaste that distinguishes it from other extra virgin olive oils.
